Easy Bison Meatloaf

Ingredients
- (2 Pounds) Ground Bison
- (2 Eggs) 1 Dozen Large Eggs
- (2 Healthy Pinches) Sea Salt
- (2 Healthy Pinches) Pepper
- (Optional) Bread Crumbs
- (3.5 Cups) Ketchup
- (3 tsp) Brown Sugar
Directions
Defrost 2 pounds ground bison in the refrigerator for 24 hours. Remove bison from the fridge, and empty contents into a mixing bowl. In mixing bowl, add 2 eggs, bread crumbs, and a couple healthy pinches of sea salt and pepper. Mix ingredients until evenly coated. Empty mixing bowl into glass oven safe pan and preheat oven to 350 degrees. Our glass pan is about 9x9. While oven is preheating, in a separate bowl mix 3.5 cups of ketchup with about 3 tsp of brown sugar for the topping. Mix thoroughly, and apply topping to dish. Place meatloaf in the oven for 1 hour. Edges should darken and topping will be runny. Remove from heat and let set for at least 5 minutes. Serve when cooled with a serving spatula. Our favorite pairings with meatloaf are mashed potatoes, honey toast, and/or sweet corn.
