Perfect Bison Steak

Bison Steaks are quick and easy on the grill, taking 2/3 the time as other steaks. The key with lean meats, is a good sear, and a medium rare finish.

Thaw bison steak fully in the refrigerator for approximately 24-48 hours. Heat grill or cast iron pan. If pan searing, add olive oil. Remove from package, and season to choice. While garlic powder, paprika, thyme, rosemary all go well with bison, we keep it simple and apply coarse sea salt and freshly cracked pepper. 

Place steak on cooking surface and sear to a light golden brown, flip and repeat. Depending on cooking temperature, this may only take 2.5 minutes per side. Remove from heat after both sides have seared, as target wellness for a bison steak is medium rare, which will ensure moisture retention and tenderness. The target internal temperature should be 125 degrees, as a steak will continue to cook when removed from heat. 

After resting for a few minutes, slice as desired, and enjoy!!
